SOUTHWEST
STUFFED
PEPPERS & TOMATOES

 

PEPPERS:
1 cup Minute® rice, cooked w/1 tsp ground turmeric
8 Anaheim (or other mild) chili peppers
3/4 cup chopped Roma tomatoes
1/4 cup chopped green pepper
1/2 tsp salt
1/2 cup Monterey Jack Cheese, finely shredded
1/4 cup mozzarella cheese, shredded
cilantro, fresh (optional)

 

TOMATOES:
6 small tomatoes
1 can black-eyed peas, drained
1/2 cup Italian-seasoned bread crumbs
1 can corn kernels, drained
1/2 cup green onions, chopped fine
2 tbs white onion, chopped fine
2 tbs Half-and-Half
1 tsp ground pepper
1/2 tsp salt
2 tbs celery, chopped fine
1 tbs butter, melted
1/4 cup water

 
SERVES: 6 to 8 each recipe.
