2 lb. mild whole hog sausage
1 bag frozen hash browns, shredded
12 eggs
1 onion, diced
1 red bell pepper, diced
1 green bell pepper, diced
1 clove garlic, chopped fine
1-1/2 cups cheddar cheese, shredded

 

This recipe can be halved to make 6 to 8 servings.

Also, try using ham or diced, cooked chicken instead of sausage to add variety.
